Chocolate books aim to delight all the senses Print E-mail

Belcolade and Editions Francoise Blouard have announced the global launch of two unique chocolate books.
leroux_cover.gifThe first, Matiere Chocolat, is a stunning box set containing a coffee-table style book featuring beautiful photographs of amazing chocolate sculptures produced by Stephane Leroux, including a wave, a rose, granite, a bamboo cane, and a mahogany plank, to name just a few of the illustrations.

Every page demonstrates the technical expertise of Leroux, bringing matter to life in chocolate form, in such a striking fashion. Leroux is a recognised pastry chef and is passionate about chocolate, travelling  the world representing Belcolade, to share his passion with others.

Throughout the 416 pages of these Design techniques for Chocolate, Leroux presents around 50 style exercises using a step-by-step approach, from the creation of a stem in cocoa butter, through to the production of a concrete brick!
More than 1,200 photographs with accompanying text offer a wealth of detail on the progress of each piece – from the raw material, chocolate, to its transformation into a work of art.

The other new book ‘Cacoa – The Roots of Chocolate,’ is written by Dominique Persoone, a Bruges chocolatier, who takes readers on a journey following an expedition to Mexico, tracing the roots of chocolate in Central America.

Persoone has helped to revolutionise the traditional chocolate praline. His work in the kitchen has seen him rework and tweak recipes enabling him to produce chocolates which deliver amazing taste experiences, although not always associated with chocolate – including tequila, oysters and guacamole. In the book the author shares his expedition, and brings readers a collection of the treasures he found on his journey, transforming them into dozens of original recipes which he shares for the first time.
